Link Lovin’ Vol. 4

I know, I know… I’m so late! It’s nearly 11pm, and I’m finally putting up this week’s edition of Link Lovin’! It’s been a busy week, and an especially busy day, but I couldn’t let the weekend in without sharing some of my faves! So without further ado…

  • I’m not a huge Katy Perry fan, but I love the use of strings in her new song, and the video’s quite beautiful!
  • I am, however, a huge Haley Williams and Paramore fan. I’ve been scouring You Tube for covers of The Only Exception for a while now, and Kate’s is my fave. I love how she’s one of the few who had the balls to sing the bridge the way it was meant to be sung :)
  • Two of my favorite bloggers opened up new stores in this last week! Elsie now has a IRL storefront for Red Velvet Art, and Liz’s new online shop, Little Gray Suitcase, is open for business! Be sure to check them out :) One of my 2011 plans is to set up shop for some of my handmade creations, and they’re both major inspiration <3
  • I found another blog to subscribe to, Mama’s Losin’ It! I’m especially loving the Weekly Writing Prompts (you may be seeing some of these subjects around SC soon!). PS: I totally have a soft spot in my hear for anyone who’s rocking Thesis.
  • James at Bluebird Vintage posted the most darling photo diary of her day.
  • Contrast Mag linked to a great interview my dad did with their marketing director, and professional surfer, Jason Shibata, after he won the Sponsor Me Ala Moana Bowls contest earlier this year. Gotta give it up for the Kamehameha boys (My dad and “Bats”) and successful Hawaiians (yeah, those two again!).
  • This Normal vs. Pirate vs. Jamaican lesson win is hilarious!
  • April Rose got a new haircut, and some amazing photos of a unique salon!
  • Kelly from Yes, Please was a part of this magical event:
  • Elisa made some ultra-adorable silhouette wall hangings.
  • One of my fave wedding websites, Offbeat Bride, posted a roundup of Halloween-ish wedding invites!
  • Oh, Hello, Friend showcased the most lovely little studio!

  • I have a mini obsession with cameos, and Kaelah has some cute ones on display :)

Cookbook: Barbeque Chicken Salad Sandwich with Ranch Slaw

I thought I’d keep it simple for lunch this week and make a sandwich; They’re easy to both make and take to work everyday! I was having a craving for coleslaw (umm, yeah, first time for that one!), and thought a barbeque-flavored chicken salad would go great with it. (I was right, btw!).

So here’s what I did:

Ingredients

  • 1 lb. Chicken breast
  • 1 onion (Though I only used half)
  • 1/3 cup Barbeque sauce
  • 2 tbsp. Mayonnaise
  • 1 bag (Approx. 4 cups) Coleslaw mix
  • 1 tsp. Apple cider vinegar
  • 2 tablespoons Ranch dressing
  • Black pepper and seasoned salt to taste
  • Bread of choice

Directions

Chicken Salad:

  • Season both sides of chicken breast with black pepper and seasoned salt
  • Marinate in barbeque sauce of choice (I used a Hickory-flavored one) for at least 30 minutes (I let mine sit for about 45 minutes, while I ate dinner)
  • Bake for about 40 minutes (18-20 minutes on each side) at 350 (I preheated the oven while I was doing the dishes from dinner; I also lined the baking sheet with foil, for easy cleanup, and folded a little lip at each end to prevent the juices from running off the edge of the pan)
  • Let cool for 10-15 minutes when done, and then shred for salad (I started by slicing, then peeled it apart by hand, and then — for good measure — went at it with the whisk; Hey, if it works for egg salad, why not chicken salad?!)
  • Slice onion into small, thin strips (I used a sweet onion, thinking it would be a nice contrast to the tangy barbeque sauce)
  • Scoop in mayonnaise and mix everything together; I also added in a few more dollops of barbeque sauce, just for fun :)

Barbeque-Chicken-Salad

Ranch Slaw:

  • Pour coleslaw mix into bowl (I used a local brand that doesn’t include carrots; I can’t stand them!)
  • Pour in ranch dressing, season with a little pepper and seasoned salt, and toss (I know, so difficult)



The Sandwich:

  • Scoop a couple of spoonfuls of the barbeque chicken salad mix onto a slice of bread (I used my favorite 12-grain)
  • Top with a couple of forkfuls of ranch slaw
  • Top with a lightly-mayo’ed bread slice
  • And just to bring it home, serve with barbeque-flavored chips!

  • Forgetting: My shoes. And I have to will myself to go home to get them, and then head back to the gym (and not flop on my bed and stay home!
  • Making: Gonna try new recipes for chicken salad and coleslaw to make for lunch!

The Sunday Seven Vol. 4

It’s Sunday, which means the weekend’s almost over :( But before it comes to an end, let’s play a little Sunday Seven!

1. What was your first job?
The first thing I ever got paid to do was sing! My first semi-steady job was as a pressbox announcer for University of Hawaii football, and my first job-job was as a sales gal at Billabong in Waikiki!

2. What is your astrological sign?
Pisces. I think. I might be an Aquarius, though. I was born on the cusp so I’m really not sure; It differs based on what website/newspaper/magazine I’m reading. My friend Melinda told me that there’s a way to find out by checking the moon or stars or planets on the day I was born, but I don’t know if I believe it enough to find out, lol! I usually identify myself with Pisces.

3. Do you like rollercoasters?
I love love love em! We don’t have anything good in Hawaii, so I hit the themeparks hard whenever I’m on vacation!

4. Who is your favorite Sesame Street character?
Mr. Snuffleupagus is so adorable!

5. Are you currently single or taken?
Single. And not mingling ;) Sometimes I miss the comfort of a relationship, but my family and friends are the real loves of my life, and I’m so so happy with where I am right now!

6. Are you close to your siblings?
It’s just the one, my little (well, he’s 13 but taller than me) brother, Shayde, and we’re very close! I love love love that crazy kid!

7. When was your last paycheck?
Friday! I love payday :) But I don’t love bills :(

  • Freelance Folder shared a Manifesto for a Freelancer with a Family. I may not have a husband or kids, but as I try to balance upcoming freelance projects with my other obligations (full-time work, school, family, hula, etc.), it’s definitely a worthy read.
  • If there’s one thing we know how to do at Kamehameha , it’s SING! And this year the Hawaii International Film Festival is featuring One Voice, a documentary about our beloved tradition, Song Contest, where each class in grades 9-12 compete against each other in an a capella traditional Hawaiian music contest. It’s a long and sometimes-stressful process, but it really is a beautiful event. PS: Go red.
  • I’m not vegan, but if this vegan rainbow cake tastes as good as it looks, I’m down!
  • Sandy A La Mode shared some of her favorite bits of prudent advice. #181 and #229 are my faves.
  • I think I’ve mentioned it before, but my family and friends are the loves of my life. I’m extraordinarily fortunate to have such amazing people in my life, and I think I’ll celebrate some of my fab girlfriends with a special date soon :) Thanks to Miss Social for the great ideas!
