Vegan/Vegetarian Challenge Week
I’m usually a total carnivore, and pretty picky about the vegetables I eat, so when I first read about Monica’s Vegetarian Challenge, I brushed it off. And I didn’t even bother considering about the vegan part!
But the more and more I thought about it, the more I wanted to give it a shot! It would give me a chance to try some new, healthy dishes/recipes and challenge myself to something I’ve never done before. So I signed up! And here I am, on day two of my week as a vegetarian :)
Here are a few dishes I’d like to try (If not for this challenge, then in the future for some vegetarian deliciousness!):
- Veggie Bagel Sandwiches
- Tofu Pad Thai
- Spinach and Cheese Stuffed Mushrooms
- Veggie Pasta
- Tofu Stir Fry
- Vegetarian Pasta Salad
- Corn Chowder
- Stuffed Tomatoes
- Meatless Mapo Tofu
- A Simple Salad

Mixplate Monday Vol. 9
Happy Cyber Monday! Are you buying anything? I’m not, I’ve got my holiday shopping under control, and I’m saving the last little bit for my big shopping day with the BFF in a week. Anyhow, on to this week’s Mixplate Monday…
Last Week’s Highlights
- Played the usual Mixplate Monday
- Had a rough week at work :(
- Decided to take a fall break
- Had the worst haircut experience of my life
- Teamed up with Adam Sandler to say Happy Thanksgiving
- Gained 10 lbs. in turkey, ham, stuffing, mash potatoes and pumpkin rolls!
- Gave some love to my favorite links
- Snagged a few things on Black Friday (I went after work, not at the crack of dawn!)
Weekend Happenings
- Slept in. Way in.
- Hunted for and climbed a ladder to change my smoke detector battery, and get rid of that deafening noise!
- Ate Thanksgiving leftovers :)
- Watched a few things on Netflix, and tried to catch up on Boardwalk Empire
- Started preparations for my week as a vegetarian (More to come on this one!)
On the Agenda
- Playing lots and lots of Christmas music
- Working more on Project Love Note
- Establishing goals for 2011, for myself and for Side Culture
- Finalizing my holiday gift list for the big shopping day on Monday

- Carrying: My camera, and I’m hoping to practice taking some lovely photos

Holy lazy Sunday! It’s after 10pm and I’m finally getting to work on this week’s edition of The Sunday Seven, lol! See you tomorrow :)
1. Who’s your favorite superhero?
Kikaida, lol! All my uncles loved him growing up, and passed that along to us kids.
2. Can you use chopsticks?
Of course, but I don’t cook with them like some people in my family!
3. What is your favorite Starburst color?
Between strawberry and cherry, it’s a push.
4. Who was the last person who texted you?
My dad. He’s away on a road trip with the UH football team, and I was looking for the ladder to change my smoke detector battery, so he told me where it was.
5. Do you ever watch soap operas?
No. I used to watch Young and the Restless with my great-grandma as a kid, though.
6. Has your mom ever been on tv or in the newspaper?
I remember my parents being on tv when my little brother was born. I was so bummed that I left the hospital earlier with family, and didn’t get to be on tv too, lol!
7. Do you know how to dance?
Well, I’ve been dancing hula since I was four. Other than that, I love hitting the dance floor with the girls and the gays ;)

Happy Black Friday! I’m at work today, bummer. (Actually I might be a little bit of a blessing because there’s a strong possibility I could blow my life savings shopping on Black Friday, lol!).
Anyhow, I know I’m on fall break this week, but there are still a few links I’d like to share. So here we go…
- My dad took University of Hawaii football player Laupepa Letuli to the studio to record his first song! First Love is pretty amazeballs! And “hi” to Uncle Sean and Uncle Wendell!
- Today I’m celebrating Buy Nothing Day, ha!
- I’ve been kinda obsessed with The Boondock Saints this week, lol! I watched it again, and finally saw the sequel (The Boondock Saints II: All Saints Day). Here’s my favorite scene from the original, and cult classic. Warning: Very violent.

Happy Thanksgiving from Me and Adam Sandler
Happy turkey day, everyone! It’s been a bit of a rough week, and Thanksgiving’s usually like that for me :( But my good friend Daniel reminded me that there’s so much to be thankful for, and there really is.
I’m especially thankful for my family, near and far, and my friends, old, new, and those I’ve never met beyond the interwebs ;)
