Reverb 10: One Word
You know that little button to the left, the one that says “Reflect & Manifest #reverb10″? Well, Reverb 10 is an online initiative for reflecting on the past year and ushering in the next.
And, yes, that button has been hanging out for a while; The project was supposed to start on Dec 1. It’s now Dec. 29. So here I am, 28 days later, finally getting started. I obv won’t be done by the end of the month, but I really like the project, so I’m gonna hang in there ’til I make it to the end!
So let’s get started. (Finally).
December 1: One Word
Encapsulate the year 2010 in one word. Explain why you’re choosing that word. Now, imagine it’s one year from today, what would you like the word to be that captures 2011 for you?
In 2010, my word was “recovery”. Not to say that I don’t know that I’m extraordinarily fortunate in many ways, but it’s been a rough year or so — personally, professionally, emotionally, spiritually — and I’ve tried to overcome these things this year, to improve my life and my approach to it.
I’ve spent more time than ever with my family and friends, doing things that make me happy, and being honest with myself. These things have had a profound influence on me, and while I have acres of growing to do, I think I’m on my path to true contentment.
In December 2011, I want my word to be “stride”. I’m looking forward to spending the next year making strides in life, literally and figuratively. By this time next year I’ll have run the Great Aloha Run, committed to completing college, stepped out on my own and left the nest, and set on a career path. And whatever obstacles come my way, I will have taken them in stride. (I hope).

Read More »Cookbook: Vegetarian Challenge Meatless Mapo Tofu
Ever since I tried the vegetarian challenge a few weeks ago, I’ve been trying some new vegetarian recipes! This time it’s meatless mapo tofu.
There were two firsts: My first time making mapo tofu from scratch (I usually used packaged sauce) and my first time making mapo tofu without the meat! So here’s what I did:
Ingredients
- 2 tsp sesame oil
- 4 cloves of garlic
- 2 tbsp ginger
- 2 tbsp bean paste
- 2 tbsp shoyu
- 1 brick firm tofu
- 1 brick medium tofu
- 2 green onions
- 2 cups white mushrooms
- 1/2 cup water chestnuts
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
Instructions
- Prep: Peel and mince garlic, peel and mince ginger, slice green onion, mushrooms and bamboo shoots, drain and cube tofu
- In a large saucepan: Saute garlic, ginger and whites of green onion in oil
- Stir in bean paste, shoyu, mushrooms and water chestnuts
- Stir in medium tofu (I let it crumble, so it broke down into smaller pieces like ground meat)
- Add firm tofu and stir lightly (being careful not to bruise tofu)
- Serve and enjoy!
If I could do it over again (and I will, it was delicious!), I’d go a little easy on the bean paste; It added too much sweetness for my liking, and I was really hoping for a kick of heat!

It’s the day before Christmas, can you believe it?! I’m spending most of the day gift wrapping, but also hitting the gym (in preparation for everything I’ll be eating tomorrow) and watching movies! And, most importantly, sleeping in :)
