I was walking around the grocery store, trying to decide what to eat, when I saw that pasta noodles were on sale; So I decided to get some and make Alfredo! I couldn’t remember what the ingredients were on the recipe I had at home, so I Googled some recipes on my iPhone (SO handy, I tell ya!). I couldn’t decide on any one recipe (but I knew I wanted to try it with cream cheese!), so I grabbed a box and decided to kinda fudge my own! Here are the results:
Ingredients
- 1/2 cup butter
- 2 shallots
- 2 cloves garlic
- 1 box cream cheese (8 oz.)
- 1 brick/wedge parmesan cheese (5 oz.)
- 2 cups milk
- 1 lb. chicken (I used thighs, they have a little more flavor than breast, and are much cheaper)
- 1 tray mushrooms (3-4 cups)
- 1 lb. pasta
- Salt & pepper to taste
Instructions
To Prep:
- Let butter and cream cheese sit to soften
- Mince shallots and garlic
- Grate/shave/crumble parmesan cheese (I realized too late that we didn’t have a grater, so I sliced it and then ran it through the food processor)
- Cube chicken and season with salt & pepper
- De-stem and quarter mushrooms
- Cook and drain pasta (I used penne because I knew I’d be taking leftovers to work, and I didn’t want to deal with transporting fettucine and trying to reheat it via microwave)
In a Shallow Pot:
- Add butter and melt (Over medium-low flame)
- Add shallots and garlic and sweat
- Add cream cheese and melt
- Add parmesan cheese and melt
- Add milk and cook until cheeses are fully melted and incorporated into sauce
In a Pan:
- Add chicken and brown
- Add mushrooms and let simmer
Combine:
- Once the chicken and mushrooms have cooked together (I only waited about 5 minutes, because I didn’t want the mushrooms to get too soft), add to Alfredo sauce and mix together
- I noticed that there were still some cheesy lumps, so I let the whole thing keep cooking for a few more minutes
- Serve over cooked pasta and enjoy! I did :)
Notes: Most recipes call for only 1 each of shallots and garlic cloves, but I really like both, so I went for it! You could also easily cut back on the cream cheese (the sauce did turn out a little on the thick side) and the butter. In fact, I recommend it — You’ll probably feel less guilty for eating it :) But it was so easy to just throw in the whole box/stick!
