I’m usually a total carnivore, and pretty picky about the vegetables I eat, so when I first read about Monica’s Vegetarian Challenge, I brushed it off. And I didn’t even bother considering about the vegan part!
But the more and more I thought about it, the more I wanted to give it a shot! It would give me a chance to try some new, healthy dishes/recipes and challenge myself to something I’ve never done before. So I signed up! And here I am, on day two of my week as a vegetarian :)
Here are a few dishes I’d like to try (If not for this challenge, then in the future for some vegetarian deliciousness!):

- Spinach and Cheese Stuffed Mushrooms

Nice choices! I’ve been a vegetarian for almost eight years now and love a majority of the foods you listed above.

i actually lean towards this type of eating habit.
its really hard to find something when your out and about. this world is made for meat eaters, and dairy lovers. its the truth.
i usually starve while out working because there is nothing. if i don’t bring something with me.
sandwiches at subway u can kinda prescribe to ur liking..
japanese usually has no dairy. just the whole fish thing. (which i eat)
um, otherwise, i go vege plate at yummys or i just go to wholefoods salad bar or just duh get a salad!
good luck. being a vegan makes food a major obstacle

@Ui: I think I’m leaning toward pescetarian at the moment. I did vegetarian (not vegan, yikes, I wouldn’t even last a day!) for a week for this challenge, and then when I had chicken for the first time after that, it really messed me up. Stomach ache, head ache, multiple trips to the bathroom :/ So I’ve stuck to fish/seafood as my only type of meat since then. I think I’d like to include chicken/turkey in my permanent diet, but I’m still trynna work it out for now. I know for sure, though, that I definitely need to cut out (or, at the very least, cut back) on eating red meat.
And it’s tough for sure to eat out. I ate from home every meal except one during my vegetarian week. And all my vegetarian meals this week have been from home, but I’ve gotten fish while eating out.
Why’d you go vegan? Health? Animal rights? Just curious :)
